קשה לדעת בוודאות אילו סוגי גבינות היו בארץ ישראל הקדומה. על פי המקורות היהודיים ניתן להסיק שהגבינות היו חלק מן המטבח המקומי ושהגבינות הבסיסיות היו גבינות פשוטות יחסית. (מתוך המאמר)
